Kerala Beef Pepper Roast Recipe (Beef Ularthiyathu) – Easy Method

Beef ularthiyathu – beef slow-roasted with crushed pepper, shallots and curry leaves – is one of Kerala’s most loved dishes. Done the traditional way, it takes hours. With our Instant Beef Pepper Roast Mix you pressure cook the beef in the masala, then roast it dry in a pan. Here is the method from our pack.

Time: About 50 minutes  ·  Makes: Up to 1 kg beef roast  ·  Mix used: Instant Beef Pepper Roast Mix

What you need

  • 1 packet Natur Blend Instant Beef Pepper Roast Mix
  • 1 kg beef, cleaned and cubed
  • 4 tablespoons oil
  • 350–400 ml water
  • A little raw coconut oil to finish
  • A pressure cooker and a wide pan

The mix is pre-seasoned with salt, so taste before adding any more.

How to make Kerala beef pepper roast with Instant Beef Pepper Roast Mix

  1. Add oil. Pour 4 tbsp oil over 1 kg cleaned beef.
  2. Add masala. Add the full packet and mix well with your hand.
  3. Marinate. Let it marinate for 10 minutes.
  4. Add water. Add 350–400 ml water and mix well.
  5. Pressure cook. Cook for 1 whistle, then simmer on low for 20 minutes. Or cook for 6–10 whistles, depending on how tender the beef is.
  6. Finish and roast. Release the pressure. Move the beef to a pan and roast until dry. Add a little raw coconut oil and salt if needed.

Tips for the best Kerala beef pepper roast

  • Roast in a cast-iron or heavy pan for the darkest, crispiest edges.
  • Keep the flame medium-high and stir often in the last step so the masala caramelises without burning.
  • Add thin coconut slices (thenga kothu) while roasting for a true naadan style.

What to serve it with

Serve with Kerala porotta, rice and moru curry, or kappa (tapioca). It also works as a starter.

What’s in the mix

Dehydrated shallots, coriander powder, crushed black pepper, salt, chilli powder, garlic powder, tomato powder, meat masala (coriander, fennel, cinnamon, cloves, star anise, cardamom, chilli, black pepper, bay leaf, nutmeg, mace, garlic, ginger, curry leaves), dehydrated green chilli, ginger powder, mustard seeds, dehydrated curry leaves and turmeric powder.

No artificial colours, preservatives, additives or flavour enhancers are added during manufacturing. Contains: Mustard. Made in Wayanad, Kerala.

Frequently asked questions

What is the difference between beef curry and beef roast?

A roast is cooked until the gravy dries and coats the meat. A curry keeps its gravy.

How long does beef roast keep?

Like any home-cooked beef dish, keep it covered in the fridge and reheat thoroughly before eating.

Does the mix already have salt?

Yes. Every Natur Blend instant mix is pre-seasoned with salt. Cook as directed, taste at the end and add salt only if you need it.
