Natur Blend Instant Chicken Curry Mix pack

Easy Kerala Chicken Curry Recipe – Ready in 25 Minutes

A good Kerala chicken curry usually means roasting onions, grinding masala and juggling a dozen spice tins. With Natur Blend Instant Chicken Curry Mix, the onion, tomato and whole-spice masala are already blended and seasoned for you. All you add is oil, water and chicken. This is the exact method printed on our pack, with a few extra tips from our kitchen.

Time: About 25 minutes (10 min marinating, 10–15 min cooking)  ·  Makes: Up to 1 kg chicken curry  ·  Mix used: Instant Chicken Curry Mix

What you need

  • 1 packet Natur Blend Instant Chicken Curry Mix
  • 1 kg chicken, cleaned and cut into curry pieces
  • 4 tablespoons oil (coconut oil for the most Kerala flavour)
  • 400–500 ml water
  • A clay pot (manchatti) or any heavy pan

The mix is pre-seasoned with salt, so taste before adding any more.

How to make Kerala chicken curry with Instant Chicken Curry Mix

  1. Add oil. Pour 4 tbsp oil over 1 kg cleaned chicken.
  2. Add masala. Add the full packet and mix well with your hand so every piece is coated.
  3. Marinate. Cover and marinate for 10 minutes.
  4. Into the pot. Add the marinated chicken to a clay pot or pan.
  5. Add water. Pour in 400–500 ml water. Use less for a thick, clingy gravy and more if you want extra curry to soak into rice. Mix well.
  6. Cover and cook. Cover and cook for 10–15 minutes until the chicken is cooked through. Add salt only if needed.

Tips for the best Kerala chicken curry

  • Bone-in pieces give a richer gravy than boneless.
  • Rest the curry for 15–20 minutes after cooking. The gravy thickens and the flavour deepens.
  • Follow the quantities on the pack. Changing the oil, water or chicken amount changes the taste and texture.

What to serve it with

Serve it with hot rice, appam, idiyappam, chapati or Kerala porotta. It also makes a quick lunchbox curry and keeps well in the fridge for the next day.

Frequently asked questions

Can I use boneless chicken?

Yes. Boneless chicken cooks a little faster, so check after 10 minutes.

Do I need to add onions or tomatoes?

No. Dehydrated onion and tomato are already in the mix. Just add oil, water and chicken.

Does the mix already have salt?

Yes. Every Natur Blend instant mix is pre-seasoned with salt. Cook as directed, taste at the end and add salt only if you need it.
